The History of Honey: The Only Food That Never Expires and the 8,000-Year-Old Cave Painting That Proves It
There is a cave in southeastern Spain called Cuevas de la Araña, which translates as Spider Caves. On one of the cave walls, painted in red ochre about 8,000 years ago, is a small figure climbing a rope ladder up a cliff face toward a nest of bees. A basket hangs from one arm. The bees swarm around the figure in frantic lines. The person is naked, with no protection.
This is the oldest known depiction of humans and honey. 8,000 years ago, someone thought this scene was worth putting on a wall permanently. They were not wrong.
Why Honey Never Goes Bad
Let me start with the chemistry because it is actually interesting.
Honey is approximately 80 percent sugars, primarily fructose and glucose, and about 17 to 20 percent water. That low moisture content is the first reason it does not spoil. Most bacteria and mold need water to grow. In honey, there simply is not enough.
The second reason is hydrogen peroxide. Bees produce an enzyme called glucose oxidase that reacts with honey’s sugars to produce small amounts of hydrogen peroxide, which has antimicrobial properties. The third reason is acidity. Honey has a pH between 3.2 and 4.5, which is too acidic for most microorganisms to survive. The fourth reason is the way bees cure honey: they fan it with their wings to evaporate moisture until the water content drops below the point where fermentation can occur.
Archaeologists have found edible honey in Egyptian tombs that is over 3,000 years old. The oldest honey ever recovered, found in the Republic of Georgia, dates to approximately 5,500 years ago and tested positive for the presence of original bee pollen. Some researchers believe the Egyptians understood, at least empirically, that honey did not spoil, which is partly why it showed up in royal burial contexts and partly why it became one of the most valuable trade goods in the ancient world.
8,000 Years of Getting Stung on Purpose
The person climbing the cliff in the Spanish cave painting was not doing beekeeping. They were honey hunting, which is exactly what it sounds like: finding wild bee nests in cliff faces and robbing them by force, with no protective equipment, no smoke, no plan except to be faster than the bees.
This activity predates organized beekeeping by several thousand years and never entirely stopped. The Gurung people of Nepal still practice cliff honey hunting today, harvesting honey from nests on vertical cliff faces using handmade rope ladders, in a tradition that looks essentially identical to the Spanish cave painting.
Organized beekeeping appears in Egyptian records around 2450 BCE, where hieroglyphic carvings at the Sun Temple of Niuserre show men blowing smoke into hives and removing honeycombs. The Egyptians kept bees in cylindrical clay hives, stacked horizontally like logs. They produced honey at scale, used it to sweeten food and medicine, and offered it to their gods. Bees were sacred in Egyptian tradition: a specific hieroglyph showed a bee, and ancient Egyptians believed bees were created from the tears of the sun god Ra.
What Everybody Used It For
The range of honey’s historical applications is genuinely remarkable, and most of them still make sense under modern analysis.
Medicine comes first. Every major ancient civilization used honey as a wound dressing. Egyptian medical texts from 1550 BCE describe honey as a treatment for wounds, skin infections, and eye conditions. Greek physicians used it. Islamic golden age doctors used it. Medieval European physicians used it. Modern research has confirmed that honey applied to wounds inhibits bacterial growth, maintains moisture, reduces inflammation, and promotes tissue healing. The antimicrobial properties that keep honey shelf-stable also make it effective against wound bacteria, including some antibiotic-resistant strains. Manuka honey from New Zealand, produced by bees that pollinate manuka tea trees, has particularly potent antibacterial properties and currently appears in clinical wound dressings.

Preservation comes second. Before refrigeration and commercial food processing, honey’s antimicrobial properties made it useful for preserving other foods. Ancient Greeks preserved fruit in honey. Romans preserved meat in honey for long transport. Egyptians used it to preserve the bodies of their dead, often packing honey directly into body cavities during mummification.
Fermentation comes third. Mead, fermented honey wine, may be the oldest alcoholic drink in human history. Pottery residue from vessels approximately 9,000 years old in China shows evidence of a fermented drink made from honey, rice, and fruit. Mead appears across Norse mythology, Greek texts, African traditions, and pre-Columbian Americas. It seems every culture that encountered honey eventually figured out what happened if you let it sit in water.
The Sugar Trade It Preceded
Honey was essentially the world’s only readily available sweetener for most of human history. Sugar cane originated in New Guinea around 8000 BCE and spread gradually through South Asia, but refined sugar as a commodity did not reach Europe until Arab traders introduced it to the Mediterranean around the 7th century CE. Even then, refined sugar remained a luxury product well into the 18th century.
This means that for roughly 7,000 years of recorded human history, honey was the primary way to add concentrated sweetness to food. The economic implications were significant. Honey production and trade were major industries in ancient Rome, medieval Europe, and across the Arab world. Beekeeping monasteries in medieval Europe were not running a side hobby. They were operating economically important production facilities. The beeswax from the same hives provided candles for church services, which made them doubly valuable.
